Risotto with Provola cheese and sparkling wine
Ingredients for 4 people:
400 gr. rice
250 gr. Provola cheese
2 glasses of dry sparkling wine
1 small shallot
1 lt. broth
butter
olive oil
grated Grana cheese (2 generous handfuls)
Preparation:
Chop the shallot and cook it in a pan with a little bit olive oil.
Add the rice and let it toast for a couple of minutes, than add the sparkling wine and afterwards soak it with the broth; mix well to amalgamate.
After about 15 minutes, add thin slices of Provola cheese, some butter and 2 handfuls of grated Grana cheese.
Mix until you obtain a cream, let it rest for 2 minutes and serve it hot.
