Asparagus pie
Ingredients for 4 people:
3 big white asparagus from Zambana
4 eggs
100 gr. Grana cheese
250 ml cream
Puff pastry (also frozen)
Salt
Pepper
Nutmeg
Preparation:
Cover 4 little pie molds with a diameter of about 3,5 cm with puff pastry.
Prepare the stuffing with all the ingredients, except the asparagus. Fill the molds to ¾.
Coo the asparagus, cut them into little pieces and put them on top of the stuffing.
place the molds in the preheated oven at 180 degrees and cook them for about 15 minutes.
remove the pies from the molds and serve them with local sausages.
Asparagus bruschetta
Ingredients for 1 person:
Bruschetta bread
3 big white asparagus from Zambana
80 gr. Grana cheese
1 big tomato
3 basil leaves
Salt
Pepper
Olive oil
Preparation:
Cut the asparagus into thin slices and dress them with some salt; let them marinate for about 15 minutes, drain the excess water, and dress the asparagus with the chopped tomato, salt, pepper, basil and olive oil.
Put the bread in the oven until it is crispy, remove it and put the mixture on the top.
Serve the asparagus bruschetta with Grana cheese flackes and a trickle of olive oil.
